With every new year, I like to reset how I eat. During the holidays I let go and eat what seems like, everything. It doesn’t take long before I start feeling the effects. I gain a few pounds, feel tired more often and start to feel stiffness in my joints.

As soon as I start putting healthy things into my body again, all that goes away. I wanted to share with you my tried-and-true recipes for resetting my diet and starting the year feeling great!

I basically eat the same thing every day or most days. I find it easier to eat the same thing short term than to constantly find new things that require research and a lot of thought. I will eat these things for a few days or even a few weeks depending on how I am feeling. If I need a break, I might change it up for one day or one meal but then I go right back to this plan. Simple healthy dishes that I can eat without too much thought that heals the damage done for whatever reason.

The following recipes are those I have used for years on resets or when I want to lose a few pounds. I love them all and they are all very healthy!

What I Eat In A Day

For breakfast at 10:00 AM I make a fabulous smoothie. Mine is made of organic frozen blueberries, Greek yogurt, organic fresh spinach, organic almond milk (unsweetened) and protein powder. I make it the size I want according to my calorie requirements so some days less and some days more. I may switch to frozen assorted berries or even a frozen banana, whatever my mood may be.

Lunch is cottage cheese and salsa mixed into a dip and then I have organic corn chips for dipping. The salsa may be homemade or organic store bought. Again, I pay attention to serving size and calories depending on my goals.

Dinner is a version of the following recipe. White beans and roasted tomatoes. Oh, how I love this simple dish and how easy it is to make. This can be switched up with different beans and herbs or condiments. Sometimes I may add some ancient grains and then drizzle a little balsamic vinegar and olive oil on top.

For a snack I have a bowl of popcorn. I love to make my own, the old-fashioned way in a pan on the stove. I also like Skinny Pop if get premade.
