My Roasted Chicken Pot Pie Recipe

The Scoop

I have made this chicken pot pie so many times. Sometimes I make it in a big cake pan and sometimes I make it in individual pans. We always love it.

I use this recipe as a base but make lots of changes.

I made these when it was just the two of us.

Changes I Made   

1.    I use mostly fresh vegetables and roast them. I usually use carrots, potatoes, onion, celery, etc. I do add peas too and they are usually frozen.

2.    I even roast my chicken although you can use a store-bought roast chicken instead.

3.    I roast everything, mix it all together and add the sauce made like in the attached recipe and put it in my bake ware.

4.    Then I mix up a biscuit mix (I always use the Red Lobster Cheddar Bay Biscuit mix). I drop it in large spoonful’s all over the top of my chicken and vegetable mixture and spread it out a little.

5.    Then I bake as directed on the biscuit mix.
