I have been sharing recipes with you on the blog on Saturdays for a while now. A lot of my recipes are no recipe recipes. When you reach my age (62) you have a lot of them. It’s kind of fun to be able to throw togetehr something delicious based on years of experience.

Recently a reader of the blog was so generous to share one of her recipes! This gave me an idea. I would love to share more readers recipes so if anyone wants to share their favorite recipe send it to me and I will pass it along. You can email it to me at southwesterndesertliving@gmail.com.

Meanwhile I tried Jane’s recipe and I can tell you it is amazing! I hope you will try it too! Like Jane, I love the Costco Pesto so I had it on hand.

Here is what Jane said . . .

“You're generous about sharing recipes and I loved your Chicken Pot Pie, so here's one for you! I'm 63 and after 36 years of making family dinners, it's getting old to come up with ideas.  This one is just delicious and although I'm often asked for the recipe, it's a "no-recipe recipe"  with only four ingredients.   Here you go:

1.  In a sprayed or lined baking pan lay out chicken breasts/thighs or fish fillets.  Pour pesto sauce over the top, covering all the chicken/fish.  ( I use Costco's pesto sauce.)

2.  Add a layer of thick sliced tomatoes (if they're too thin they turn soggy)

3.  Pile plenty of shredded parmesan on top

Bake at 400 degrees about 20-25 minutes or until chicken/fish is done and cheese turns golden.

No salt needed since the pesto and cheese have plenty.  It makes tons of sauce so be ready to soak it up with bread or rice.
