The Scoop

I am always on the lookout for healthy dishes that are full of flavor. Autumn is one of my favorite times of the year to cook cozy meals at home.

I try to make it fun by doing a little research looking for recipes that look delicious, simple yet creative and beautiful.

This post is about soup and salad. Healthy colorful and comforting.

I like to get fresh beets and roast them myself. You cannot beat the flavor when doing this step. You could use store bought roasted beets or even canned.

Steps for making the Soup

One of my favorite soups to make is Butternut Squash soup with Chipotle Cream. The cream is Greek yogurt with a little Chipotle Adobo sauce. It gives the soup just the right amount of kick.

I roast a whole butternut squash. While it is roasting, I sauté onions, carrots and celery. Once they are translucent, I add some garlic. Next, I add chicken broth and then when the squash in done roasting I add it in with everything else. At this point I add in some chipotle peppers in adobo sauce. A teaspoon to a tablespoon is all that is needed. Then salt a pepper to taste and lastly top with my chipotle cream.

To make the chipotle cream I add some of the adobo sauce from the chipotle peppers to Greek yogurt making it the consistency of cream.

The key is having a hand blender to make the soup a smooth silky texture. All the ingredients depend on the size of the squash and how thin I want the soup.
