Tom Kha Cai - Yes Please

The Scoop

I am working on a weekly menu that consists of soups! I love soup. I love to make them and to eat them. I find I don’t over eat if I have soup for dinner and I truly enjoy making them. They can be so warm, rich, comforting and satisfying. And most of all they can be healthy but still delicious!

This recipe is one I have made many times but sort of forgot about it for a long time. I was going through my recipes and found it and decided it should be on the menu weekly.

Tips

The key is to try to get as many of the ingredients as you can, organic. Also leave the lemon grass in one piece. It is hard to pull out when you cut it up in one-inch pieces. I even take a kitchen hammer to it to release the flavors before adding it to the soup.

I have all kinds of new pans but I always go back to my husband’s grandmother’s pans. They are not fancy but for some reason I feel good using something she loved and used and he saved.
