The Scoop

After a life time of trying to stay fit I have learned a few things. One is that when you change how you eat your taste changes. When you take sugar out of your foods, you no longer crave it and more than that, it doesn’t really taste good.

This is a meal that I can eat anytime of the day and the delicious flavors explode in my mouth. I look forward to it like I used to would have a creamy pasta dish. The same is true for the smoothie I make almost daily.

At this point in my life, it is not about how good the food tastes in the moment as much as how good I feel after I eat food. Healthier choices and smaller portions enable me to look forward to my next meal. It enables me to feel energized not tired while my body tries to digest.

The Ingredients

  • Whole grain bread or sourdough that is made with aged starter

  • Organic eggs

  • Avocado

  • Tomato

  • Organic humus

  • Olive Oil

  • Fresh cracked black pepper

  • Oregano

  • Course Sea Salt

  • Two oranges and an old-fashioned glass juicer

How I Make It

  • I fry my egg in olive oil over easy

  • I toast my bread

  • Spread humus on the toast

  • Spread avocado on next

  • Add a couple of sliced tomatoes

  • Put the egg on top

  • Sprinkle on a little oregano

  • Salt and pepper to taste

For my juice (I only drink about a quarter of a cup)

  • Two oranges fresh squeezed. It takes 30 seconds.
